Vegan Carob Brownie with Orange Glaze!

Once upon a time there were brownies which were that tasty and moist. For a long time they were chasing a dream – how to become healthier and easier to make but stay fresh and tasty.  It was a difficult decision to make but in time options where introduced that were natural and tasty and fun to use and it couth their attention. They switched cocoa with carob, eggs with aquafaba and butter with orange juice and became new age brownies. Powerful, delicious and healthy Vegan Carob Brownie.

Brownie converted to Gluten Free also so it could be available to all who wanted a delight. 😉 and guess what: They are Vegan, so it’s good for fasting, for treating, for to go or to stay 🙂 for kids and adults alike.

This journey is for the Vegan people out there who wish to have a real nice Brownie but do not want to compromise. We are constantly in search for new ways to diversify our food and not compromise both ways – quality and deliciousness :). This one is Juicy, the carob powder is one of the best substitutions of cocoa /for people like me who have a slight problem with cocoa/ and tastes so good. You can have two and wont feel that heaviness afterwards.

One suggestion before hand: maybe lower the sugar and orange juice if you like it less sweet.

Introducing a new, fresh take on a classical Brownie recipe!

Let’s stop talking and start making the freshest recipe with carob ever.

For the brownie: 

  • 120 g carob powder
  • 60 g corn meal or rice
  • 1 can aquafaba
  • juice from 1 orange
  • 140 g brown sugar (you can use agave cristals or some other sweetener)
  • 4 tbsp olive oil (or  coocnut oil)
  • 2 tsp bakeing powder (gluten free)
  • 1 tsp vanilla
  • 2tbsp flax meal (with 6 tbsp water for 3 minutes)

For the glaze:

  • Juice from 1 orange
  • orange zest
  • 100 g brown sugar (you can use agave cristals or some other sweetener)
  • 2 tbsp liqueur (amareto or sth. под ръка or you can skip it but it gave thin flavour to the glaze)
  • and 50 g filled almonds (optional)

Preheat the oven in 180 C and prep a 20-23 cm tray with baking paper or with oil and corn meal.

Beat the aquafaba until it becomes strong foam like beaten egg white and set aside to prep the rest of the mix. The liquid needs to be cooled down in the fridge before you start beating.

In a bowl combine the sugar, orange juice, oil and flax. After that add the carob powder and corn meal with vanilla. Combine it verry well so that there are no lumps left.

Gently add spoon by spoon the aquafaba foam. Don’t be hasty here, the foam might go bad if you hurry too much! Pour into to the tray and bake it for 30 min or until the wooden check stick stays dray /you know a bamboo stick is best for checking the stage/.

Let it cool and cover with hot glaze.

For that purpose you need to bring to boil the ingredients for the glaze for 4-5 minutes and then gently pour over the glaze, take it easy and let it suck the moist in.

Cover the cake with the glaze and let it cool. Now you have your precious Vegan Carob Brownie which you can enjoy consciously and guilt free!
