Sweet Temptation – a Vegan / Nuts free / Gluten free – Super breakfast snack

Sweet Temptation

For your sweet tooth we will create that fruity cake. It’s gluten free, sugar free, nut free (optional) and very very tasty.

It can last long and it’s a good power up treat. We love it and take it to every vacation as a back up but it always ends up eaten first :). It’s tasty and nutritious and energising, perfect quick snack when you are not exactly hungry. So let’s do it together now!

For 12 bars:

  • 3 cups of dried friuts (if you use lite fruits the cake is going to be lite)
  • 1 cup nuts (if you want to be nut free use seeds such as sunflower and pumpkin seeds)
  • 2 cups gluten free flour (most of the time I use chickpea and rice flour)
  • 1 tbsp husk fibres
  • 2 tsp baking powder (gluten free)
  • 1 tsp soda (gluten free)
  • 1 tbsp coconut oil (can be skipped)
  • vanilla and cinnamon
  • 1 ½ Cups of warm water

All you need to do is combine everithing together and bake.

If you use apricot or some big dried fruits you’ll have to chop or blend them and that is also true for the nuts or seeds you choose to use.

The sweet temptation on the picture is made with dried resins, figs, cranberries, pumpkin and sunflower seeds.

Cover the pan with baking paper and pour the mixture. With spatula or wet hands spread evenly to cover all corners and approximate a flat surface.

Bake for 30 minutes or until golden colour. Let it cool on a steel grid and then cut into 6/4 cm pieces or whatever you feel like is best for you. You may even make small squares, just a bite size for quick use. It can stay for up to 1 week in plastic bag or a sealing food box.

Enjoy it for a treat, on the road, it is perfect breakfast on any long trip 🙂
